Fruit Cake

Simple Fruit Cake


Ingredients :
  1. All - purpose flour (Maida) - 3 cups
  2. Eggs - 4
  3. Sugar powder - 2 1/4 cups
  4. Baking powder - 1 teaspoon
  5. Pineapple essence - 4 drops
  6. Orange Juice - 1 cup
  7. Butter - 100 gms (at room temperature) 
  8. Cashew-nuts - few - cut into small pieces
  9. Dry Cherries - few 
  10. Walnuts - few - chopped
  11. Almonds - few - chopped
  12. Dates - few - chopped
  13. Pinch of salt

How to make Fruit Cake :
  • Preheat oven to 325 degrees F
  • Combine all dry fruits and sprinkle little amount of flour in it, keep aside
  • In a medium size bowl, add sieved flour, sieved sugar, baking powder and mix it
  • Break the eggs into the mixture and stir it with the batter
  • Add butter,mix it well
  • Add Orange juice, pineapple essence and pinch of salt into it
  • Beat the batter till smooth and creamy or use food processor to make smooth
  • Now add dry fruits into creamed mixture and stir it
  • Grease the aluminum tray or cake tin with ghee and make a coat of maida
  • Pour batter up to half of the aluminum tray 
  • Cover it with a aluminum foil
  • Bake it for 1 hour
  • Once done, remove from the oven and place it in cool place

  • Slice the cake with a knife and serve it

Note : When insert a knife into the cake, it should come through clean. it shows cake is fully cooked.

  2. You can make with the pressure cooker too...
    1. Heat the pressure cooker over high flame for 2min.
    2. Use greased cake tin with pour batter, put it inside the pressure cooker (Don't add the water inside the cooker).
    3. Close the cooker lid.Make sure don't put the whistle.
    4. After 2min, keep the flame high to low.
    5. Let it cook for 45 minutes.Ensure do not open the lid immediately...
