Plantain Fry (Aratikaya)

Plantain Fry Recipe (Aratikaya koora)


Ingredients :
  1. Plantain - medium size - 2, cut it in different shapes
  2. Green chilly - 3, cut lengthwise
  3. Red chilly - 1
  4. Mustard seeds - 1/2 tsp
  5. Cumin seeds - 1/2 tsp
  6. Ural dal - 1/2 tsp
  7. Channa dal - 1/2 tsp
  8. Turmeric powder - 1/4 tsp
  9. Pinch of asafoetida powder 
  10. Few - curry leaves
  11. Salt to taste
  12. Sunflower oil - 2 tsp
  13. Red chilly powder (Optional) - 1/2 tsp
Note :
  • 1 Teaspoon (tsp) = 5ml
  • 1 Tablespoon (tsp) = 15ml
Procedure :
  • Heat oil in a non-stick pan over medium flame
  • Add mustard seeds, cumin seeds, ural dal, channa dal, red chilly and asafoetida powder, saute till light shade
  • Add green chillies and turmeric powder, saute it
  • Add cut plantain and some salt, close a lid until plantain is fully cooked
  • Finally, add red chilly powder if required, fry it till raw smell disappears
  • Serve it with the sambar rice etc.,
